Jyoti's Hazelnut Cookies

A little recipe that I discovered with a little experimentation - they taste delicious! Make them for your bubble this Easter weekend and enjoy with a hot tea or glass of chilled hemp milk. 

INGREDIENTS (locally sourced delicious and nutritious ingredients - organic, gluten-free and vegan of course)

2 cups of hazelnut meal
3 T coconut oil
1/3 cup maple syrup
Vanilla essence or 1 pod
Pinch of salt crystals
Optional chocolate roughly cut


Melt coconut oil, mix in maple syrup
In a separate bowl mix hazelnut flour, 1/2 t baking soda, inside scrapings of the vanilla pod & the salt. Sprinkle in the chocolate if you’re using it. Make a well in the centre and pour in wet ingredients. Mix thoroughly. It will be a bit crumbly so add a little more oil if you need to. Use your hands to make a ball of cookie-dough then press it flat on a greased baking tray. Flatten with a fork and add a nut if you fancy. Bake at 180 for about 8-10minutes.
